Easy Spanish Recipes

Having visited Spain a few times and most recently on a trip to the northern region of Asturias, you can tell the Spaniards are incredibly passionate about their food!  On my last visit to Spain I was more adventurous in trying things I perhaps wouldn’t normally try and was quite surprised that I ate scallops and actually found them quite nice!

When trying to plan our meals for the week I try to make a good portion of the dishes fresh so am always trying to include different meals which I think my fussy youngest may like!  These 2 Spanish inspired meals went down really well with the eldest, the youngest is yet to be persuaded….I’m hoping he’s going through a phase!

Chicken and Chorizo Rice Pot

Spanish Chicken Rice One-Pot

This is a super easy one-pot dinner with a small amount of preparation involved, it’s not super quick but it is tasty and for a mid-week dinner completely doable.  Using the traditional ingredient chorizo and possibly my favourite to snack on too, I love the intense flavour of the dish and with the chicken thighs means the meat stays quite moist.  I always tend to make the full recipe and freeze the remaining into portions for another day.

Paprika Pork

Spanish Paprika Pork

This is another easy dish to rustle up after school and it doesn’t take that long to cook also.  The paprika really comes through in this recipe and is great served with rice, this makes a nice family meal as it’s not spicy just tasty.  It’s also quite a healthy dish, you could make it even more healthy by adding vegetables like red peppers.  Again this recipe is from my go to online recipe book from the BBC and can be found here.

These are two of my favourite dishes to prepare at home, I’m keen to try a Spanish dessert at some point and the most obvious choice would be churros, although I did see this interesting milk dessert (Leche Frita) which looks pretty easy and there’s some great Spanish food ideas here too from Alpharooms.
