Gammon with Honey and Mustard – Family Recipe

Finding meals that suit the whole family can sometimes be a challenge, especially when you have one that’s fussier than everyone else. I was challenged to create a meal using French’s Classic Yellow Mustard and whilst you may think this type of mustard is typically seen on top of a hot dog, I decided on marinating some gammon steaks in a mix of honey and mustard, frying off and serving with some vegetables, based on a similar recipe I had seen online.

The marinade was really simple being two parts honey to one part mustard, with enough to coat four gammon steaks.  Leaving that to marinade for a little while (the longer the better).  Prepare your vegetables, in our case we had our go to regular vegetables, carrots, broccoli and mashed potatoes.

The gammon only takes around 4-5 minutes each side to cook in a frying pan, enough to get the caramelisation from the honey on the steaks.  Once the steaks are cooked, remove from the pan and put to one side (covered to keep warm), if you wish you can create a sauce using some chicken stock and crème fraiche to finish of the dish, however I think actually it would have been just as nice to have with no sauce, depending on preference.

There are many other ways in which you could incorporate Frenchs Classic Yellow Mustard into recipes, but a glaze I think is one of the most obvious ways and if you have a family member who isn’t too keen on strong flavours, by using as a glaze, the flavour isn’t too intense.

Here are some more ideas:

  • Slow cooked gammon, using a honey and mustard glaze to finish off in the oven (a variation on the above)
  • Mustard salad dressing – mix mustard with oil, white wine vinegar and a pinch of sugar for a simple yet tasty dressing for salad or new potatoes.
  • Roast beef – simply rub a layer of mustard over a joint of beef before roasting.

These are just a few ideas on how you can incorporate the modest yellow mustard into your cooking, how do you like to eat yours?
